Mid-temperature Alpha-Amylase
I. Brief Introduction:
Alpha-Amylase is made of Bacillus Subtilis in the Fermentation and extraction method, is widely used in the liquefaction of starch sugar, alcohol, beer, monosodium glutamate, animal feed, Fermentation industries and textile, printing & dyeing, de-sizing and etc.
II. Definition of Activity:
One gram of solid alpha-amylase powder ( or one milliliter of liquid alpha-amylase) at 60°C and pH6 liquefies 1 mg of starch in one hour is defined as one enzyme activity unit and marked with u/g or u/ml.
III. Characteristics:
1. Heat stability: Stable at 60°C or below; Optimum operational temperature 60 -70°C; Applicable to the liquefaction process of 90°C (highest).
2. pH Stability: More stable at pH6.0-7.0; Optimum operational pH below pH6.0; Serious inactive in pH5.0

V. Usage and Reference Dosage:
(The following dosage is an example of 2000 u/g, other specification can be converted according to the enzyme activity)
1. In manufacturing process of beer brewing and alcohol: Recommended dosage is 3.0L/Ton of raw materials, liquefying at 80-90°C and keep for 30 min.
2. In manufacturing process of starch sugar, Maltose, monosodium glutamate and other fermentation industry: Recommended dosage is 0.2% Calcium chloride(based on the weight of raw materials) and add amylase 3.0-4.0L/Ton of raw materials and liquefying at 80-90°C and keep for 30 min.
3. Textile de-sizing: 0.2% (o.w.f) and keep at 50-80°C for 20-40 min. (It is suitable for the material which can not withstand high temperature such as the silk, chemical fiber, woven fabric of cotton, wool and etc.)
4. In feed industry: this enzyme functions as improving digestion, adjusting immunity and improving feed utilization. Recommend dosage is 0.02-0.04kg/Ton of complete formula feed. Generally, it is used with pectinase, β-Glucanase and Cellulase for better performance.
5. In manufacturing process of juice: this amylase can improve the juice transparency and avoid turbidity. Recommend dosage: 0.02-0.1 L/Ton of juice raw materials and keep at 45°C for 60-120 min. Generally, it is used with Pectinase and Cellulase for better performance.
6. In manufacturing process of steamed bread, bread and other flour products: this amylase can improve the product quality and lengthen the shelf life. Recommended dosage is 0.05-0.1kg/Ton of raw materials.
7. Other Industries: Recommended dosage is 2-4 L/Ton of dry basis and the concentration of calcium ion is 150ppm.
VI. Storage:
Should be stored in a cool, dry and well-ventilated place; protect from direct sunlight, heat and dampness; avoid storing with poisonous and harmful substances.
